These bars are quick and easy and make great fuel for the road. This recipe works well with all kinds of fruit puree including blueberry, strawberry and even pumpkin.

  • 1½ cups chia
  • ½ cup date paste
  • ½ cup any fruit puree (like blueberry, or strawberry)
  • 1 teaspoon of vanilla or almond extract
  • Pinch of salt
  1. Line up an 8X8 baking dish over a sheet of parchment paper and cut a piece out that is the width of the bottom. Line the dish with the parchment paper.
  2. Blend all ingredients together in a food processor. Turn mixture out onto parchment lined dish and spread out evenly. Set in the fridge and allow to set for at least 30 minutes before cutting.
How to Make Date Paste:
Pack dried and pitted dates tightly into a glass jar and cover with water. Allow the jar to sit at room temperature, overnight. Drain any excess water and move dates to a food processor to puree. Return date paste to jar and store in the fridge. Use as needed.
