Meatloaf is a classic comfort food. Here bison is used instead of beef, which offers a lot less animal fat and a lot more iron.

  • extra virgin olive oil for pan
  • ½ yellow or white onion
  • 2 carrots
  • 1 stalk celery
  • 2-3 cloves of garlic
  • ¾ cup organic oats
  • ½ tsp red chili powder
  • ½ tsp red pepper
  • 1 tsp tyme
  • ½ tsp sea salt
  • ½ tsp black pepper
  • 1 organic egg
  • 1lb of ground bison
  • Sauce
  • 1 cup organic ketchup
  • 2 tsp Worcestershire sauce
  • ½ -1 tsp siracha sauce (optional)
  • 1 tsp horseradish sauce (optional)
  1. Preheat oven to 375⁰ and oil and 8 inch loaf pan.
  2. Chop carrot, onion and celery into 2 inch pieces and add to a food processor. Pulse 5-7 times until finely chopped. Add egg, oats, spices until well incorporated and then add bison until well combined. Press into loaf pan.
  3. Bake for 30 minutes. Remove from the oven and add half of the sauce over the top of the loaf. Return to oven for another 30 minutes or until center reads 150⁰ with a thermometer. Remove from oven and add remaining sauce over the top or serve on the side.
