Basic Oven Baked Salmon
Oftentimes it goes unnoticed that preparing individual 8 ounce fillets of fish takes no more than 10 minutes in the oven. This is a very easy and super fast way to make weeknight meals in minutes.

- 2 fillets of wild salmon or cod (6-8oz each)
- grass-fed ghee or extra virgin coconut oil for brushing
- salt and pepper to taste
- Preheat the oven 450◦
- Use a broiler pan or line a cookie sheet with aluminum foil and place a cooling rack on top of it. Brush salmon filet on both sides with oil and place on rack. Season with salt and pepper. Bake in the oven for 10-12 minutes. Allow to rest for 5-10 minutes before eating.
