Grain Free Cinnamon Coffee Cake

  • 3 cups almond flour
  • 1½ teaspoon baking soda
  • ½ teaspoon fine sea salt
  • 1 tablespoon ground cinnamon
  • ½ teaspoon freshly ground cardamon
  • ¼ cup melted unrefined coconut oil
  • 3 large eggs, whisked
  • 1 cup unsweetened apple sauce (2 apples pureed)
  • 1 cup fat free plain Greek Yogurt
  • ¾ of a cup coconut sugar
  • ½ cup raisins (soaked in rum)
  • ½ cup chopped nuts (walnuts, pecans)
  • Streusel Topping
  • 2 tablespoons of coconut oil or butter
  • ¼ cup almond flour
  • ⅓ of a cup chopped nuts
  • 2 tablespoons maple syrup
  • ½ teaspoon of cinnamon
  1. Preheat oven to 350◦
  2. Coat the bottom and sides of a 9" springform pan with coconut oil. Combine flour, baking soda, salt, and spices together in a large bowl. Whisk together wet ingredients with sugar and oil in a separate bowl. Blend wet and dry together until well combined. Fold in nuts and raisins. Pour batter into the pan, smooth out the top if needed. Sprinkle top of the cake with streusel mixture.
  3. Bake for about 40 minutes or until a toothpick comes out crumb free. Let cake cool on a rack.
